Very bad port from controller
It's so bad, you almost have to play through once just to learn the variable controls.
F key can do a take-down + hog-tie, if the person is standing fully and you have lasso out. If they are down on ground or not fully up on feet, the player will Kick instead.
If the person is down and you want to lasso without kicking, then equip lasso, then quickly point at person, right click to aim and left click to throw lasso, soon as it lassos them look for when it says [ F ] key to Hog-tie.
As a note, if you tackle someone while having the Lasso equipped, you will hogtie them automatically (unless it glitches).
Also, i have noticed a significant Lag in the game's response to switching context controls functionality - so a slower user, and some patience, do seem to improve this gameplay.

Yeah, well noticed. Impatience gets you in trouble.
Since I realized the lagging with/on/at/through the keyboardbuttons, I can play the game a bit better.
But the controls for PC-version of this beautiful game are not very good designed, unfortunately.
Seriously how can someone die from one kick?
In RDO you can get like +5 or something XP for a "knock out"
This is only when you knock out an "enemy" though.
I just don't do it with Bounty Captures in RDO though because it "might" kill them by accident.
Basically once I have them hog-tied on the ground, I will switch to FIST so it doesn't bash them with any weapon. Then have the camera so the enemy is down at bottom just out of sight of camera view on-screen, walk up to their head, turn around away from them, then turn back around quickly and while doing so press F so you will kick the person. If it try it while facing them it will try to un-tie them.
So yes it is rather dumb on how some key binds you can not change are doubled up. But also the game just doesn't always do it right either. A quick press of F should kick or strike the person, while holding down F is to un-tie them.
When a NPC or whatever is "knocked out" you can confirm this by drawing a gun and point at them afterwards, if the dot turns Red, that means they are still alive.
Though I don't think I can continue that random encounter any more unless I sit there and wait for her to wake up. Maybe I will try that next time and see if she will say something interesting when she does.
When it's Black, it has yet to be looted. When its a faded black/grey, it's been looted.
But again it doesn't take "knocked out" into effect. So these might show up as an X, especially when hog-tied.
Solid White Circle icon is generally for NPCs speaking or in need of help.

If it's something besides a Horse, you can do a Mercy Kill on it if you get to it in time, then approach it on foot and be ready to Hold Down R key to perform the kill with your Knife. This gains honor as you were witness to or in the vicinity of the animal and put it out of its misery so it didn't suffer during the bleed out. The injured icon might happen to a horse as well, if you have Horse Revive Tonic on your and get to it in time, you can revive apply it to the horse so it doesn't die. However the horse's states are all going to be red even after you do, so it's going to be in need of food afterwards.
