Whilst not exactly told - know this - if you're away from the camp for more than three days another camp member will come looking for you and t will result in a loss of honour.
You have a three day window, get yourself out of camp early, like 5 AM, shoot the ♥♥♥♥ out of anything you see, don't concern yourself with one, two or three star pelts, just shoot it and deliver it, obviously a three star animal is a bonus but don't knock yourself out over it.
Same applies for chickens, rabbits etc, don't obsess over the quality of their pelts or skins, Pearson doesn't, you'll get the same honour reward exactly when it's due.
A one star animal produces exactly the same meat as a three star animal, meat quality should not be confused with pelt quality.
Now you've got three days to explore.

As long as it is a whole animal you did not skin. Since skinning also removes the meat from the animal. It goes towards "food" for the Camp. So he has proper resources available to make Soups with.
Some crafted objects might also require an entire perfect carcass as well, so be sure to check that.
You can also skin an animal (lets say a Buck) then put the Pelt on your Horse, the Meat and any other items (such as Antler) goes into your Satchel Inventory. The remaining and otherwise useless carcass can be put on your Horse and sold to a Butcher, who is the only one who can purchase carcasses that have had their Pelt/Meat removed already.
Once you get introduced to and are able to deal with Trapper and Fence. Be mindful of what they both offer and require for crafting various items you will need at some point. Some items you find in the game are very unique and can be accidentally sold, blocking your ability to then craft certain items. For example on my first play-through I killed and skinned the Legendary Bear. I accidentally sold the Claw for that. Which is required to make a certain Talisman trinket at the Fence. So once that item is gone, it's gone for good. As Legendary Animals do not spawn again in Story Mode like they do in Online (RDO)
If someone requires a Pelt, then you need to skin that particular animal to get that. If it says Carcass then you need to bring them the entire carcass, un-skinned.
If I drag an animal with the lasso the same as in online mode, does the skin get ruined? I think I had a whitetail deer on my horse's back, but I was attacked and the deer fell off, and when I came back to see it, the deer was shoddy, so even though this was not happening in online mode, I wonder If in story mode the animals are ruined if they fall off the horse or you drag them with the lasso.
Speaking of legendary skins... what should I do? It is not clear to me, I give them to Pearson so that they are available later? Or is there somewhere I can store them?
I have seen that I can make some things with Pearson, but most seem blocked
The trapper turns legendary animals into clothing and you can also make trinkets at the fence which improve certain abilities.
But definitely sell legendaries to the trapper otherwise they'll just teleport to his inventory and you won't get money.
It's not like you can't go out in a couple minutes and get a couple thousand $ easy in this game. You don't need to go selling animal related stuff to make $ that's for sure.
