Shoot animal and their pelt quality drops?
Saw a 3 star buffalo, shot it once in the head and his pelt quality dropped to 1 star.

Why? How do I kill them and get a 3 star pelt?

Make sure you're using a rifle for buffalos. Repeaters do not count as such. I think a bow with improved arrows will work as well.

Laso the buffalo than go up to it a kill with Knife for clean kill, should have an interaction.

Use the correct gun, inspect them first and it'll tell you, Buffalo require a rifle (not a repeater), also always aim for the head or neck otherwise the quality will drop as well.
