How do I play Red Dead Redemption 2 offline?

When I boot the game before I have the option of Story / Multiplayer from the main menu, I am greeted with a pop-up informing me something along the lines of "the offline authentication has failed" and it kicks me out of the game.

I followed some advice on the Rockstar forums that suggested deleting the local profile via the Rockstar Launcher fixes the issue, I went ahead and did this. I then flipped into Aeroplane mode and booted the game only to still be kicked out in the same way.

Am I missing something here?

I bought this game solely for the single player mode, being unable to play it offline is a total deal breaker for me and I feel like if this is the case I have been mis-sold.

I bought the game on Rockstar Games Launcher because I thought it would simplify things, but I really can't find how to play offline.

Suuuure, you can keep playing if you lose the Internet connection while playing, but you can't load the main menu unless you have an Internet connection.

I have the game on PS4 Pro. Had I known that, I would not have bought the ♥♥♥♥♥♥♥ game on PC.
