I can't change the graphic settings

guys pls help me every single time i open the game the graphics will be back i don't want to play with full graphics

Set the game settings the way you want, exit the game, navigate to C:\Users\yourusername\Documents\Rockstar Games\Red Dead Redemption 2\Settings - right click system.xml, set it to "read only", apply... and you should be good to go.
