Not nice
No the game autosaves at intervals during a mission, if you die you'll be given the option to restart the mission or restart from the last checkpoint of the mission. And then of course when not in a mission you can save whenever.

Yes but if you die a couple of times time has elapsed in RL and you can't just quit like a normal game because you haven't reached a point where you can save yet. It's the stupidest thing I've ever seen in a game. I have 90 minutes in the game and I haven't got past the wolf mission yet because stuff keeps happening in RL and I have to start the whole game afresh. I cannot understand the logic.

I got here through a Google search trying to find an answer to this question and I can't find anything that answers my very specific question.
But, hey...glad to know the unhelpful basement-dwellers are out in force today.

Missions are rarely longer than 20 minutes. The expectation is that you don't do sandboxy stuff while on mission. Not sure why you would run off to fish or hunt while people are literally telling you to get on your horse and go.

But, see, my question doesn't have to do with being on a mission.
My worry is that I don't know when it's safe to quit the game.
I could have completed all active missions, went out and did a bunch of hunting or playing various minigames like poker, etc, and suddenly, I need to go. Life stuff, off in meatspace, has intruded upon my gameplaying. (Oh, dear!)
How can I save all of that sandboxy progress and be assured that quitting the game won't lose it all because I haven't saved properly?
The game is very unclear about how saving the game works.
Your question is rather unclear, too.
You don't necessarily have to complete a mission in order to save after.
If just exploring/ hunting while not on a mission, you can save whenever you want.
