Galloping button and quick use items?
In the tutorial for the single player game, they mentioned that if you somehow can match the rhythm of the gallop by pressing a button, the stamina won't drop as drastically? So, which key is this on the keyboard? A friend of mine who only plays with a controller, says it's the same button to soothe the horse, which it apparently is not for me playing with mouse and keyboard.

Lastly, is there a button, again like in the single player story mode, to use a potion instead of having to go through the tab menu?

On M&K tapping buttons does nothing. You tap the gallop button to go faster on controller, but just hold Shift on Keyboard. Tapping it doesn't work. They probably just forgot to remove that message from the PC version. Although, if you use a controller you would like to know about that message. So they just didn't specify it's for controller only.

Now, on controller Soothe and Gallop are different buttons, so I think your friend meant the ability with level 2, 3 and 4 horse bond. When galloping, press the Soothe keybind (default is G I think) and Arthur goes "That's my boah" or "That's a good girl" or so, and you get a small bit of stamina back. More stamina recovered the higher the bonding level. It has a pretty long cool down though. 30 seconds or more. But at Lvl 4 you can gallop forever if timed right (until the core drains that is). No need to slow down to do it either.

This, and he says he can do it to keep the stamina going forever at full gallop. I know I can "soothe" the horse when I'm trotting with it, but not at faster speeds, and it definitely does not give any stamina back, and it doesn't make sense to be useful in anything other than a full gallop.

It's related with bound level. Higher the bound, more stamina horse recover during that process.

It also doesn't matter how fast you travel by the horse, you can use the button standing still same as going full speed.

4th bound level horse with good saddle gives you setup for running forever since with specific saddle setups your horse stamina consumption is lower than his stamina recovered while pressing G, ergo. it makes your horse having unlimited stamina that way

But like I said, bound level is crucial. 1st and 2nd gives you no stamina recover or it's unnoticable amount, 3th bound level gives rather small portion of stamina back, 4th level is gamechanger here.

I can thoroughly confirm this now. Tried it out last night, and it actually did work. I've tried it before, but without any notification, like the one you get when you pat the horse at lower speeds, where your character says stuff like "whoa, whoa" and "husssh husssh", and you can actually see the character patting the horse on the neck. None of that is displayed when soothing the horse at full gallop, you just have to keep an eye out for the meter going up.
