Report a translation problem
John can do it all except the Mary Linton Missions.
Note:
if Arthur doesn't meet Charlotte, and teach her to hunt - she starves.
If Arthur teaches her to hunt, John can complete that little story.
Obviously, all Main Quest Missions and Side Missions assigned in the Main Camp can only be done by Arthur.
Bounty Hunting can only be done by John if Arthur does the first Bounty Hunter mission in Valentine before completing Chapter 5 (Good, Honest Snake Oil). You can leave the rest for John.
The miscellaneous gathering missions, Dreamcatchers, Rock Carvings, Dinosaur Bones, and even Exotics, can all be completed by John. Also, i'm pretty sure they can be started by John as long as Arthur gets the card from Algernon Wasp during Gilded Cage Mission.
There are a few Stranger Missions / Activities that can never be done by John - Brother Dorkins, Dorothy Wicklow, Mother Superior Calderón, final mission with Beau & Penelope.

P.S. I do not know:
1. ? if only Arthur can acquire the two Maps ? (High Stakes and Jack Hall Gang), but i know that John can finish them
2. ? if only Arthur can start the Jim "Boy" Calloway quest ? (Noblest of Men, and a Woman), but i know John can finish it - including killing the outlaws and obtaining the third Map (Poisonous Trail)
Well answered. Thank you for the detailed description of this all and the link. I marked yours as an answer because I hope others wondering the same thing might stumble here and find it useful to read what you wrote.
After the Game Ends (in Chapter 6) you had to survive 2 Epilogue Chapters, but something is different, isn't it?
Now you survived the end of the Game, then survived the Epilogue, and now the game has really ended. It feels like the game has ended. What are you doing here - you may ask yourself - as I did - after Chapter 6.
Next playthrough Mod the game so Arthur can do almost all of it.
John will have to meet Mr. Gill and Mrs Hobbs, bring his stats back to full, tie up a few loose ends and boom... all done.
At least that's the way I do it. I like it much better that way.
