Skip skinning animations
Is there a way to skip over the skinning animations?

The following works best with wolves since they often attack in groups, but if you've got at least two dead animals or more that need to be skinned on the ground and can be picked up you can lay them right next to each other and skin them that way. It'll skip the animation because there's not enough space for it. Having your horse nearby (but not trampling the animal) is indeed also an option. That could work for singular animals or large animals you can't pick up.

No.

I wish Rockstar would do the right thing and add a small QoL update similar to what they just did for GTA Online. It's the least they could do after they refused to at least finish the story line they left us hanging on.

Only if you kill the animal on a slope, then it skips.

If you leave your horse nearly on top of your kill it will skip skinning animation. This works online i think story mode to.

there is a mod that speeds up skinning/looting animations

If you somehow block the skinning animation (either by placing the animal on a sloping ground or on the edge of a cliff) the animation skips. If you're playing online, skinning animation of some animals like alligators can be skipped easily by standing in the right spot.

This works, but be careful not to trample the animal since that may ruin the pelt.

Another thing that works but not guaranteed is to equip your knife in your hand before skinning the animal.
The author of this thread has indicated that this post answers the original topic.
