You can visit the Online Catalog and purchase warmer gear (Coats, Vests, Gloves, etc.), to go with things you already have in your Wardrobe. You spend Arthur's Money and the items arrive in your wardrobe immediately (and people say Social Club is useless - HA!):

(this also allows you as Arthur to get those Unique Outfits from the General Stores in Armadillo or Tumbleweed in New Austin where Arthur isn't allowed to tread (without a mod).
As you add warmer items the outfit's temperature rating goes down and will be displayed on the item as you look at it in the Wardrobe (available at Camp or in any Hotel Room you have rented).
"Suitable for Cold Weather"/"Suitable for Average Weather"/"Suitable for Hot Weather"... and so on.

"The Stalker" isn't bad - I usually wear that one until I can put together something more suitable.
Trapper Garments Sets have the advantage of being "all weather" - at least that's what I gather 'cause while "The Stalker" will keep you warm in ass deep snow it also won't kill you in the desert.

From memory: Panther Vest, Wolf Coat, Boar and Rabbit Gloves, Good Big Valley Hat from The Clown Of The East Outfit and Legendary Fox or something half chaps... with dirty underwear, of course.
Mix and Match Trapper Clothing created from items from a set - WILL kill you in the Desert. The items are warm - too warm for anything but Cold Weather. A small price to pay if you want to be the Hottest Outlaw in ass deep snow, like our Toasty Protagonist above - how would you like to snuggle up next to that on a cold night, eh ladies?...lol
Upgrade your Saddlebag to hold 5 Outfits instead of only 3, but do leave one slot open at all times. The game is buggy in that if you don't leave one slot open Outfits tend to go missing from the horse - and a bad time to find out your Cold Weather Outfit is missing is when you're in ass deep snow.
If you get your hat shot off, don't pick it up. Just reload the Outfit. Picking up a hat, even your own creates a 'Custom Outfit'. Create enough of those and all the items on the horse are Custom replacing your own Outfits. You'll get the hang of it after a while.
Buy something new from a store or trapper? Don't wear it - reload an outfit from the horse. Get shot? The bulletholes make your outfit Custom - reload an outfit from the horse.
Leave one slot open to hold that Custom Outfit 'cause you're almost always going to be wearing one - until you reload an outfit from the horse.

The attraction for animal head hats simply amazes me.

Online there is no Gus Garment that doesn't sport a 'Skull Cap'. Well, Gus? I believe you've seen the last of me...lol <---is anything he makes worth having?<--- better Google that one I guess. I did see a giant furry bear coat that looked like the bear was still in it.

Hollowing out an animal skull and wearing it on my head simply wouldn't occur to me as something cool or fashionable.
At least they allow us to break those Garment Sets up in Story Mode - salvaging some bits out of what I wouldn't be caught dead in...lol.
