Best overall hunting weapon - Bow with Regular/Improved/Small Game Arrows
Varmint Rifle is necessary - don't shoot people with it. It works, but - Meh.
Best Sidearm - Cattleman - throw all 'pistols' in the river.
Best Hand Cannon (Fun, but not necessary) - LeMat.
Best Long Scoped Hunting Rifle - Rolling Block
Best Hunting Rifle - Springfield
Best Human Hunting Rifle - Bolt Action
Best Human Sniper Rifle - Carcano
Best Repeater - Lancaster or Litchfield - pick one<---like it matters<---it don't.

Of course - 12 people will have 12 different selections. Apparently that dweeb that wrote the article doesn't play much, or hunt much, or do much of anything other than make up stuff to put the internet...lol
The Scofield from the Doc is anything, but free. By the time you pay the bounties it would have been cheaper to buy it across the street at the Gunsmith. Scofield blows anyway - Cattleman eats it's lunch.

Sure, but here's the thing:
Story Missions are R*'s personal license to make your life miserable, by equipping you with what 'they think' is the best weapons for the job at hand. If you have it - it's very likely they'll shove it in your fist for a Story Mission and load it with Regular Ammo. Bend Over - Open Wide.
I pick up or purchase the weapons I WANT TO USE. R* won't equip me with a crappy weapon I don't have. Problem solved.
It is fun to play with guns tho. Mod the game and drop 'em on the ground after you get done playing - then get back to work...lol
Rare Rolling Block - Mission in Chapter 3.
Lancaster (2) - Encounter in Rhodes/Stage Robbery with Micah.
Double Action - Mission in Chapter 3
Bolt Action - Mission in Chapter 3
Cattleman - Many perfect ones laying on the ground all over the place.
Semi-Auto Shotty - anytime.
Double Barrel - Chapter 2.
Rare Shotgun - any time.
Pump Shotgun - Chapter 2? Can't remember exactly.
Litchfield - Chapter 6
Carcano - Chapter 6
Otis Miller's Golden and quite Unremarkable Short Barreled Scofield - Epilogue(s).
Any number of crappy, unremarkable sidearms - Encounter Mission - Begins Chapter 2 - Ends Chapter 6<---you can get all the weapons except 1 in Chapter 2.
Stock Mouser - Can Customize - Chapter 6.

Later in the game it will become apparent that Gold Medals are easier to get if you had spent more time on Challenges Earlier in the Game (upgrading your stats, buying the Reinforced Equipment necessary to fill out your Circle Tanks, particularly Dead Eye).
When Gold Medal Requirements for late game Missions say something like:
"Get 30 Headshots and Maintain 80% Accuracy - without taking any Health Items".
You'll want to have what seems like an endless supply of Dead Eye - and also an ample supply of Special Dead Eye Fuel in an upgraded Satchel (Special Snake Oil is NOT a Health Item).
You'll also want to seek out or Craft any and all Talismans and Trinkets that will boost performance in combat related activities. There are PC Exclusive Bobbles laying around free for the taking (Google) - and hunting Legendary Critters will score the parts needed to craft said items at a Fence.
...and I can't stress this enough:
SAVE BEFORE you trigger a Story Mission 'cause you DO NOT want to try for Late Game Gold Medals with Rookie Stats and Weapons in the 'Featured' Replay Mode. You'll want to take another try for the Gold with your Current Stats and Weapons.
Good Luck on Gambler 8... You'll love it... It's one of my Favorites.
You can use Gang Hideouts as practice arenas to build the skills necessary to take on those Golds. When you are an ASS BAD ENOUGH to walk into Hangin' Dog and use your sidearm only as a club to beat down every man on the property - you're ready.. You will have to climb the ladder and throw the Maxim Gun guy out the window, but that's a hoot too...lol

Someone could probably come up with a statistical view of "max damage for each occasion", but there is NEVER a DPS (damage-per-second) race in the game, so min/maxing weapons is a waste of time.
In the Chapter 1 "Prologue" you receive a Cattleman Revolver, a Sawed-Off Shotgun, a Carbine Repeater, and a Bow - and it is Very Easy to complete the Entire Game with these 3 weapons exactly as they are when you get them - but upgrading them just makes things more fun under certain circumstance.
Then there are a few missions in which you will acquire better or alternate weapons, such as Lancaster Repeater (Chapter 2), Rolling Block Rifle (Chapter 2), Bolt Action Rifle (Chapter 3), Litchfield Repeater & Caracano Rifle (Chapter 6).
None of the alternates are Needed, but having a mult-shot hunting rifle can be helpful.
The only real Need is when you are Hunting Animals and don't want to destroy a Pelt - that's the only time you really need to know which weapon is best - and that takes time to learn.
But for all the NPCs - it just takes a single headshot from wutever revolver, repeater, rifle, shotgun, bow, etc. and their done.
So, just have fun.
not some to pick from then, learn to use it well, keep it clean.
