You're overthinking it.
I use these:

I copy the mod files from that folder to the game directory - where RDR2.exe lives.
I keep a copy of every mod file, so I can see what needs to be removed to return to Vanilla.
A LOT of mods are also poorly maintained, will break the game and also shut it down cold when it won't start. I strongly suggest you try mods ONE AT A TIME, use them for a while (if they work at all) and see what it breaks. Remove as necessary. Mods with "Lenny" in the name are notorious for both breaking the game AND shutting it down cold. Just say NO to Lenny.
Here's a Vanilla Game Folder. If you have to Punt - remove any extra files and folders you have then verify game files. That should bring you back to Vanilla:

Step softly.
Go Slowly.
One uses the standard "ScriptHookRDR2" ,
and the second type requires "Lenny's" asi loader.
Lenny also provides a "Lenny Mod Manager"
The ScriptHookRDR2 mods do not require or provide a mod manager.
I stay away from any mods that requires Lenny's mod manager/asi loader.
Stick with those mods that only requires ScriptHookRDR2.
That being said, unlike Skyrim, M&B Warband.... etc , where a mod manager like Vortex simplifies loading and managing your mods,
ScriptHookRDR2 mods requires no mod manager at all.
My setup is such;
I have a separate (and independent of the game) folder for my downloaded & zipped mods in a folder called "RDR2 Mods"
I keep this as a repository for all RDR2 mods that I want to install.
I will unzip a mod into this folder, which creates a separate subfolder for that mod.
ie;
D:\RDR2 Mods\ScriptHookRDR2_1.0.1436.31
- in this folder is also a "bin" folder
- copy at a minimum ScriptHookRDR2.dll & dinput8.dll to your Steam RDR2.exe folder
(this is your asi mod loader for all mods you want to use)
Example Mod - Hunting Wagon
D:\RDR2 Mods\Hunting Wagon 1.1-133-1-1-1577893113
- only one file in this folder to copy to your Steam RDR2.exe folder
- hunting_wagon.asi
Steam RDR2.exe folder;
C:\Program Files (x86)\Steam\steamapps\common\Red Dead Redemption 2
And that's basicly it.
Download your mod to your Mod repository, extract the zip into the same location
Copy the asi , dll and also ini files if exist, to the RDR2.exe folder
Some mods may have a supporting folder in that mod, like the Stagecoach mod.
ie;
- D:\RDR2 Mods\Stagecoaches (folder for mod contents)
- Stagecoaches (folder)
- README.md (file)
- ReleaseNotes.txt (file)
- Stagecoaches.asi (file)
They only 2 things to copy to the Steam RDR2.exe folder is the Stagecoaches folder
and the Stagecoaches.asi file.

EDIT:
One tip that I recommend , if any of the mods has an .ini file,
which allows you to configure that mod to your specifications,
make those changes to the .ini file while it is still in your Mod repository before
copying it to the RDR2.exe folder.
You end up talking to yourself, I mean writing to yourself and thinking too much...

I have a negative outcome from this. I fear my survival dream that adds to the gameplay really might be broken as I think it runs at least one mod or two I selected with Lenny. damn!
I am this type of player in general, I love hardcore and simulation, I like to be in it, not constantly thinking that I am playing something. Hard to find these players.
yes our approach differ a lot.
YEs I will keep it simple. True.
But doing it slowly? I don't know if I have this patience. But that is the only way for success I think on mod loading, in this business sure (in others too).
I also wanted something for spicy ladies to be in there, like bath but seems all are hacker or other broken stuff or simply perversion (like all bodies naked everywhere)... That's no go for me. For me context is king as explained...
The base of the stuff I wanted to run finally this game first run was this.
and then a second run with a BAD guy approach (but I don't think I ll ever have time to a second run) with basically more gangs things and other content...
I really liked the Season change but the mod isn't really ready yet, and the game writing is anyway done inside a certain amount of time\months so if it is supposed to be like this I should not modify it. I live in a place not in the city where u can enjoy already nature changing and it goes deeper to your sould and knowledge then a game can do even this level of detail and developmen (which is a dream for us hardcore sim, role playing, thoughtful immersion players).

And now I was checking the 58 pages of mods (it will take one day maybe..
but from modders like this guy here, that shows what he's\she's running you can learn a lot and fast: like that someone has made something right for your need, no handholding hit marker trash and also FIXING THE broken first person walking speed.

Indeed my idea was to make a playtrhough in first person completely. I am not one of those people that start crying and whining because riding the horse in first person is painful... just go to sleep if you find that painful, it's life! The game (illusion) is alive! You know...

I really hope my "survival" approach as a simulator won't get switched off by dependencies of these mods like Lenny unreliable coding... But maybe even if it seems to do should try anyway if the mod has no substitutes...
Like PED damage I think it has Lenny dependency buyt Ped DAMAGE is a work of art! and I love the one shot = death ... or similar... (not like, actually I need that stuff for the immersion, if it's moddable I can't resist on that - for example GRWildlands, has stuff like enemy aimbotting, if they could go 50-60 percent but maybe more enemies I wouild immediately install it.. I like the real deal or close to it)

I will scrap the Manager thing then since both of u say here it's not really useful.
I read that dinput8.dll is useful to stop any chance the game goes online which could create issues. Is that what it is for? dll always a double edged sword in general.
Another thing I would really really suggest to read to anyone interested in immersion and also knowing a game to actually "perform" in it in an self immersive way:

(this for example made me know that there is no need to actually bring mods for a hunting wagon or have other strange stuff - actually I managed to make myself be followed by a horse and then also find a third one with which I would create a "caravan" of 3 horses and .. well, it's hard then to reach a town or a place where u can sell stuff before stuff goes bad, but still, the games really gives all the tools to do stuff.
Also some people might want to get "grab hostage" or "drag" NPC... There is no reason to do this. The game already allows "force comply" with gun pointed blank so there is no reason for so many additional things... the game already offers stuff people simply don't know exists... It's hard to master all these things of course.
I also see Log files.. from there I see there is a native trainer and then PDO damage and longer days and another .. they are in the main folder of RDR2 where the .exe sits.

That was the only mod I had downloaded that required Lenny's Mod Loader.
I could never get it to work.
I didn't put a whole lot of time and effort to figure out why, but during my research,
I found out that the Lenny's Mod Loader was originally developed for GTA5,
and subsequently released for RDR2.
The instructions for RDR2 is basically nonexistent , but the instructions for GTA5 is pretty
extensive.
I have to assume that this GTA5 Mod loader works similarly for RDR2.
One day I will do some further research using the GTA5 Lenny's Mod Loader
instructions / FAQ / Wikki and figure it out.
I just haven't put any time into it.
So for now, I will have to settle for fully clothed women to bathe me. :-(

It's ok anyway, I just wanted a non RATING censored version of the game. No need for extra stuff but I think it would have made it more consistent.
I hope that by deleting these things I will not forget anything and that there isn't nothing that has been left in the game. I will start again.

Apparently Nexus mods has like a download verify system that actually defines whatwill be your redirect based upon what did you do with the to be downloaded file: if you have downloaded it it will show another direction. This is so confusing.
This one requires LML and nobody is really complaining, so I do not understand...

Regarding the topic of keeping it simple I agree on selecting wisely stuff to add to limit the amount of weight and failure.
OFr example I wanted to put the "banking the old american art" and indeed it makes no sense as we are a gang. Why should i make a bank account? I put money in the camp site and invest them there... that is the place to go. If one uses a LAW enforcement rebalance, that is gonna already help reduce problems
Another one that using Longer days mod can be probably cut out is "More persistent weather"... apparently with prolonging of time the weather will just change and become "more persistent" by itself. So there's not point adding that mod having already one as loonger days, at least as far as I can read.

Sincerely speaking, reading all the stuff and dependancies of stuff I wanted to get additionally, and noticing that they ask to install also mods I don't want (they have requirements beyond measure) plus the incompatibilities and failure, I will just stick to easy to install stuff, and don't care for most of mods I really liked as concept.
Some ask to install Whyem mod, it's just ridicolous...
Fortunately sometimes there are 2 of the same kind mods, standalone stuff .. and it's not even sure the one that frees you from dependancies will work, but it is still worth trying. Sincerely, already the Longer days and Dark night mod (maybe lighter vers for more realism) are already making a playthrough happy.
Also there is no much mod that include the controller, which is the best thing to play this game despite being a shooter... it's relaxing... and some don't include the slow walk in FPP for controller.. there is a sheer amount of mods, but then not everything that is important is covered... and too much is asked to the user...
It's just a nightmare having all that stuff installed and hjaving maybe to fix problems in order to run them.. wathdahell...
