As mentioned - enable Steam Overlay (Game/Properties).
F6 is R*'s Photo Thingy<---it's tedious, but does have features and doesn't grab the HUD.

Grab one directly from your Graphics Card - by setting that up in your Graphics Card Software.
Disable One Drive for RDR2 - or ass pain will stalk you like an invisible Cougar in the night.
Screen Grabs via 'Printscreen' typically go to your capture buffer... open Paint (or something else) - CTL-V to 'Paste' what's in the capture buffer. Work on it or save it from there.
