But in order to be less time consuming, keep it something simple..
I use the brawler (think that's what its called?) outfit as a base..
Add Arthur's hat to it & a (slightly warm) vest & gloves, save as outfit one - Hot weather
Add drifter coat to above, save as outfit two - Average weather
Switch the coat above for a winter coat, save as outfit three - Cold weather..
Only takes a few seconds to recreate
Every time you get your hat knocked off - and you pick it up - you've created a new Custom Outfit. Don't pick up the hat. Reload the outfit from the horse.
Every time you buy a new article of clothing, you immediately wear it - creating a new custom outfit. When you get back to the horse reload one of the outfits on the horse. Don't keep creating new custom outfits 'cause eventually all your custom outfits on the horse will be new ones - you'll have to go back to the wardrobe (camp or hotel) to put them back on the horse.
If you keep creating new custom outfits, you can eventually run out of space on the horse, but the Custom Outfits will still be in your wardrobe.
If you reach down and pick up a hat - new custom outfit. Go immediately to the horse and reload one of the stored custom outfits.
It's also a good idea - if you have 3 slots for outfits - leave one empty to hold all the new custom outfits you make by doing - almost anything. Keep loading the original outfits and that will remove the new custom outfit that was created.
Need 3 Outfits on the horse?
Upgrade the saddlebag to hold 5 - then only store 4 on the horse - leave one slot open. I like to make and store 3 Custom Outfits on the horse, then put one complete outfit I bought, like The Dewberry Creek, The Vaquero, or The Stalker by Trapper, but whatever I do I always leave one slot open.
I discovered the outfits stopped disappearing off the horse.
I never lose an outfit from the horse now that I know.
It is a bit of a PITA - until you learn what not to do and what TO do - and the big thing is to upgrade your saddlebag and always leave one slot open.
I have upgraded the saddlebag but didn't realise i can have 5 outfits on the horse. Ok i will store 4 only and keep the 5th empty in case i accidently pick up a hat or when i buy clothes etc.
I noticed that all my custom outfits were not only removed from horse but my waldrobe as well :( But i'll keep in my what you said anyways.
Are you sure just buy upgrading the saddlebag at the stables that i can have 5 outfits on the horse?
I kept noticing 'New Custom Outfit' whenever I picked up my hat that got shot off or I bought anything new. Well, I quit doing that. I just reload one of the originals on the horse and leave my hat on the ground.
Here's some saddlebag trivia:
The ONLY reason I got Collector Role for Online was so I could get that sweet saddlebag that holds SEVEN Outfits. Now I can keep 6 on the horse, leaving one slot open.
Happy Days!
Also - when buying new stuff - use the Online Catalog:
https://socialclub.rockstargames.com/games/rdr2/catalogue
The stuff you buy goes directly to your wardrobe - not on your person making a new custom outfit you have to get rid of.
Happier Days!
:)
PS:
Careful... I got in that catalog one day and spent 8 thousand dollars buying every stitch of clothing in the game... it was wonderful...lol
'The Online Catalog' can work for Online or Story (click your toon in the upper right - if you have an Online Toon he'll be there). You spend the money your Toon has and the stuff goes in your wardrobe.

Upper Right - See my Toons? One for Story, One for Online. Pick your guy and spend all your money...lol
When you're at your wardrobe - Camp or Hotel - you'll notice you can only put 5 outfits on the horse. But we know to only put 4 on, leaving one slot empty.
I think that will solve your issue - as long as you remember to stop making new custom outfits - that can overwrite your real Custom Outfits - now that think about it. I'm on my first cup. A little slow off the blocks this morning...
I don't even bother with picking up hat's anymore though,
and still lose custom outfits stored in the saddlebag @ some points in the game (story missions, nfi which ones though)
Same applies with those upgraded satchels you get from the camp cook,
As they will auto equip when you make it, creating a new outfit..
Just a hint: You don't have to have the satchel upgrades equipped and you'll still get the added storage from them..
Later on though, ya may as well equip that final satchel, not that you need too..
Upgraded bandolier's don't need to be equipped either, and you'll still get added capacity.
I'd guess the gun belts would do the same? But the only reason I know the above works is due to my dislike of having a bandolier equipped..
I keep thinking you can unequip the bandoliers - but maybe not. I know you can't unequip the offhand holster, for instance.
I'm playing online today, but may check it if I have a moment.
The ONLY hat I wanted was The Liberty Hat. A 10 Gallon Monstrosity - just like "Hoss" wore (Bonanza, Baby!). I watched those shows live - on their first run. I'm 6'4" (or used to be) and always weighed about 250. Everybody called me 'Hoss'...lol.
Unfortunately where it should have shown up first - the stage robbery in Strawberry with Micah - it didn't make an appearance. The other encounter with it - The Night Folk Ending - it was being worn by an NPC that is usually murdered by them, but I got there too quickly and saved him - he escaped with the hat and I let him go.
It was the right thing to do...
The other coveted hat sits atop that utterly ridiculous Clown Suit - The Legend of the East Outfit - you get for upgrading the Satchel. It's called 'The Good Big Valley Hat'. It's a Beaute. I like the two matches in the band - nice subtle detail. If you have the Outfit - you have the hat.
The Iguana Big Valley Hat from the Trapper is almost too nice to wear, but I do. It's spotless and bright. It goes well with the Red Coat from The Legend of the East. Both of those items are a bit too nice, but do make a good 'Gamlin' Outfit'
In Chapter 6, Arthur needs all the sun he can get so I nixed the hat:

:D
(I'm thinkin' you can't unequip the Bandoliers - or I would have - along with that Offhand)
You absolutely Can Unequip Bandoliers - only way i outfit now
and i agree with ur earlier suggestion to just slot 4 outfits - this (mostly) fixes the often problem of selected outfits being removed from available list.
and btw, using a face mask or bandana to cover ur face, will also change u to a "Custom Outfit" - so very annoying.
And I never used it afterwards and the problem never occured again.
i just tested this.
So, first off, i select "Neckerchief" from "Neckwear" for my outfits, and not "Bandana" (i prefer this look)
I left camp a bit, selected "Bandanna" from the wheel, covering my face, and then deselected bandana from the wheel and returned to camp.
The Bandana was now around my neck instead of "Neckerchief".
From my horse, i could still equip the 4 saved outfits i had slotted, but when i went to my Trunk to "Change Clothing", it showed i was wearing a "Custom Outfit" and that i now had "5 of 5" outfit slots on my horse occupied (even though my horse only showed 4 outfits.
I agree, it must become a more obvious problem on the Horse Slots if you have all 5 slots occupied Before wearing the Bandana. Only filling 4 of 5 slots is the way to go.
If you go back to your wardrobe wearing the Custom Outfit you made with the mask - you can load an outfit and it should go away - just make sure it's gone from the horse.
The trick is reloading one of your outfits if the outfit you're wearing is a new custom outfit because of something you did.
It's confusing. I fought it for weeks until I figured it out.
I was just online and suddenly without doing anything - the outfit I was wearing was a Custom Outfit. I swear all I did was get shot and I wasn't wearing a hat to get shot off. The bullet holes must have made it Custom...lol <---I can name my outfits online - so I loaded one I had named from the horse and The Custom one went away. <---it was the same outfit I had on to begin with.
