The Strawberry Daquiri Upchuck Missouri Fox Trotter - since you don't have a Trainer and can't spawn yourself The Silver Dapple Crapple MFT. <---both are ugly as sin, but really good horses.
You could buy a Thoroughbred if you think you need a race horse faster than Shamus' Mule (It might be faster than Shamus' Mule, it might not be, but The Mule would take any horseman challenge, 'cause you don't NEED a Race Horse) - or shoot/hogtie the Black Lady riding one that wants to race you then steal it. She'll just abuse it - so go ahead and shoot her before she does. Same goes for that White Guy that wants to race you. Don't know what he's riding, but he definitely needs shooting/fed to a Gator - or - be creative. <---that will leave a homeless horse you can 're-appropriate' for yourself.
Any other horse worth having you can tame. Buying it would be stupid.
If you're a fan of Birthday Kiddie Ride Ponies - go tame the Red Chestnut Arabian NW of Owanjilla. It's still a crappy Arabian, but it's probably the best looking horse in the game.
Leave a slot in the stable open (or create one) when you meet 'The Veteran' in Chapter 6, become his friend and do things with him. In that Stranger Encounter (if you complete it) you'll acquire a Dutch Warmblood and it's a fine horse. <---because it's not an Arabian or a Mule (which technically isn't a horse, it's just half of a horse - the other half is Donkey).
Whatever you have - put any Trapper Saddle on it. A Trapper Saddle makes any horse 'the best it can be'. <---and your horse will Love them all.

(don't try to take 'Bowah's' Panther Trail Saddle - he'll kick the crap out of ya)
(Bowah is a Dark Bay Turk with a Braithwaite Brand on his flank - he's much happier now and so am I).

Just don't ride your current horse to close,
leave it down by the water just outside of yellow search area..
kinda fugly, but it has warm blood atleast and it's free!
Just don't forget to call your horse when the chase downstream starts on your new warmblood!
Been there/done that, just a slight pain, but a pain none the less!

don't really know if they always use them for their pack animal,
but they do use them as pack animals..

Also the one that bolts on it's owner - just before it's owner bolts - leaving you with a race horse (I didn't want <---I did bond it before I sold it and treated it very well - it left fat, clean and happy...lol).
I'm usually standing there at the panner's with 10 Grand+ in my pocket - I let him have his little 'nugget'. <---I'm sure he gets drunk with it 'cause he's back at the creek somewhere else with what looks like a magnum hangover... Loser.
What's really funny - he's working his ass off for a $25 Gold Nugget - standing right next to an endless supply of fish worth $5.34 EACH in St. Denis. I know because while he's dancing - I've put $100 worth in my Pearson Original 'Gucci Knockoff' Handbag. Dumb Loser.

That's not how you spell 'Missouri', 'Beauty' is obviously in the eye of the beholder - but it is a good horse.
Getting one in Chapter 2 is:
1) pure luck - if the 'dead one' happens to be 'almost dead', for some reason.
or
2) through a means that is absolutely a PITA - when you have to follow it for 58 miles.
If this is your first playthrough - buy one in Chapter 4.
If not your first playthrough - install a Trainer (Story Only, obviously) and spawn the dam horses you want. They fall out of the sky 10 feet from you and that's much easier/cheaper:

As soon as I get a horse brush I spawn the horses I want, Sell the ones I don't want, then buy or tame any 'Bonus' Horses I'd like to ride before the credits in the traditional manner.
There's so much going on in this game I don't need to be worrying about my car for most of it. I put what I need in the garage and stop worrying about it. There's so much more important things to be worried about...lol
The dead horse has been patched and is always dead now... for the other trick, you don't need to follow the horse for 58 miles... it tooks me 10 minutes and one try to catch it.. you just need a fast horse (the black arabian for example) and a wagon...
I bought the Blue Roan for Online (the coat doesn't look like vomit, or make me want to vomit) right after I got the Chestnut Turk - then got my Dark Bay Andalusian.
I'm good to go.
The Missouri bit was a joke kinda. I don't live in Missouri, but close enough they might ride over here and kick my ass for misspelling it. A mean bunch over there - they have to be, they live next to Arkansas..lol

Your first horse, will easily carry you throughout the entire game. Should you buy a different horse? Well, it's all opinion, so get what you like. I prefer the red Arabian found in West Elizabeth.
