Esc/Story/New Game
(load the current game - can't do it from the Splash Screen, for some reason)
Click Manage in the upper right portion of the screen and click remove Rockstar Savegames and Features to open a wizard.
On the Before you begin page, click Next to begin. You can skip this page in the future by checking Skip this page by default box.
On the Select processing type page, choose Roleplaying based Game or Action based Game and click Next.
On the Game Selection page, choose the game to which you want to add or delete. In most cases, this choice is the game you are currently logged in to. Click Next.
Select all desired files on the Savegames page. When you add savegames, the wizard prompts you to add prerequisite savegames and features, if any. After you have selected the desired files, click Next.
Select all files on the Savegames and Features page and click Next.
Complete the deletion of the selected files and click Next on each screen.
After you complete the initial deletion of the chosen savegames, the Confirmation page displays and lists a summary of the changes. Verify the changes before proceeding. If you want to erase your whole hard drive automatically after savegame deletion completes, check the box labeled Goodbye if required.
Click Ok to delete the saves.
...or just start a new game.

You could have just deleted everything extra - and verified files.
Starting a new game, frozen. Verifying files and starting a new game frozen at the exact same place. Deleted the game and down loading a fresh install now.
It's always a good idea to back up your vanilla game directory before installing any mods. Saves you unnecessary trouble.
you still have all your saves like every other game in existence in the documents folder under rdr2.
btw, you can delete saves when you're in the "load game" screen.
just select each file and press whatever button it says to delete in the bottom right.
Just go into the folder in Documents and delete your saves.
