You must sleep at least 8 hours every 3 days (SLEEP is the catalyst that makes eating right work).
Bathe Regularly (this is usually when I sleep at a nice hotel with bedsheets that don't smell like Uncle's ASS (or mine).
And Attempt to eat right, but let's face it... when you're powering down 100lbs of Thyme Big Game a day - you might be a little heavy.
DEAL WITH IT - IT DOESN'T MATTER THAT MUCH.
You can do this very quickly by using fast travel, however do not use that from Camp, go to a town, like Valentine or Strawberry for example and use the in-town fast travel via Coach. Use a fast travel route that has a good distance between the 2 towns. For example, riding to Strawberry (or fast travel there from Camp); once there Fast Travel by Coach to Annesburg. Once you get there rent the room, go to bed for 8 hours, when you get back up, go back to the clerk and pay for a bath, do not consume ANY alcohol after you pay for a bath. Now go have your bath to get a stats boost. Now enjoy the rest of the day and try not to eat much. Instead to keep weight down or help lower it further, make use of alcohol and tonics as a means of healing or stats boosters.
I simply plan a 2 day excursion, that ends with a bath and sleep somewhere nice - then gather 3 animals for camp on the way back (and yes, I'm filthy again, but I had my rest...lol).
I'm not looking to keep Arthur at the perfect weight just yet, just to lower is weight. Like I said my health core even has the icon that shows I am losing weight when I wake up, the problem is that it's bugged and my weight isn't actually going down.
The problem isn't that I don't know how to lose weight, it's that I should be losing weight when I'm not. It's bugged.

You can put the brakes on and blow the whistle, but that Damsel in Distress on the track ahead is a Dead Girl.
That penalty does not always come after you. I've sat around and played with Chapter 2 alone for hundreds of hours and rarely ever had any honor issues because of staying away from Camp like you say. When you have been away from Camp a long time, eventually as you ride through various areas like say going to visit the Fence at Emerald Ranch, usually around that open-plains area I would get confronted with someone from Camp coming up to me on horse-back saying "Oh hey Arthur, you've been away a while, we're all worried about you". Then you are given a choice; Continue on your own; or Join them in riding back to Camp. To not get the honor penalty you can just ride back with them, once at camp do a few odds and ends then leave again for many days on-end if you so choose.
Also losing a little honor in Story Mode is not a big deal because you can easily gain this back quickly. For example I can easily farm some positive honor back again by;
> Calming my horse, then Brush and Feed it.
> Killing a few animals or birds within a short period of time, or even a few close to one another and then skin them all. Yes you can get positive honor just by killing 3-4 Chickens and skinning them all; this results in "You've been resourceful; hey that deserves some positive honor"
> Coming up on random NPCs that need your help, whatever it might be and actually doing the right thing that helps them out. This gives positive honor as well.
> If you have an outstanding Bounty $, you can go into Town (as its just easier to do in towns) and simply walk near where people are gathered and pull out a gun, hold Aim + U keys to fire the weapon up into the air; this should result in "disturbing the peace" let the Police be called into action. By this time put your weapons all away and remain on-foot, NOT on your horse. When the Police show up, Surrender. This results in you "doing the right thing" as you will be spending time in jail and paying your bounty (it costs you half of what the real bounty $ is when you do this); and the end result is seen as "Well yes he committed a crime, but he did the honorable thing and surrendered to the Law and paid the price for his crimes via fines and time in jail" ~ That is how the public sees you when you surrender to police in this game. Once released from jail you should get a positive honor boost.
You're gonna get that Honor Demerit for being away from Camp for more than 3 days.

Chapter 6? Sure - Easy Peasy (1.5x Honor Bonuses).
If you want The Dewberry Creek Outfit, for instance - in Chapter 2 - you're gonna have to work on it... for a while...
If you want Hero Grips for your Cattleman in Chapter 2 - you'd better start working on them in Chapter 2, but you won't get where you need to be until Chapter 3.
You're NOT going to get that 50% Discount on everything you buy until Chapter 6, but 25% is doable.
Others are very likely playing a different game than you are. It may not matter to you, but to others it may.
WTF you on? Saying you can't do this stuff in Chapter 2? The only thing I really can't do is reach a complete 100% in Health/Stamina/Dead-Eye just yet. But they are all very close to that. Like 80% or something, Been about 2 months since I messed with my Story Mode saved game so I'd have to go double-check the #s
