Havent played for a while but either see the trapper or the Fence ay Emerald Ranch.

They are quite unremarkable.
You can't customize them.
You don't need them - they aren't required to complete the game.
and
if you have them R* may load you up with one, loaded with regular ammo in a Story Mission - Billy's Mauser comes immediately to mind on the Trolley Mission when you REALLY wanted to use your LeMat with Express or Explosive, but R* wants you to use their loadout, not yours.
A Note about your Cattleman Revolver:
Fully upgraded it's one of the best sidearms in the game.
When ONE is wielded, leaving a free hand to 'Fan The Hammer' with - it has a fire rate equal to an MG-42 (I exaggerate - a bit) and reloads in the blink of an eye. It also has nearly the power (with Express Ammo) and range of a Lancaster.
Don't put your Cattleman to bed - upgrade it and keep it in your holster - when you acquire an Offhand - stick a Hand Cannon in there for Murphree Fun, but you'll always have your Cattleman when your cannon is out of ammo (it'll take an ETERNITY to reload it).

Reach Level 4 Honor - and get the Special Hero Grips:

Reach Level 4 'Heathen/Bad Guy/Low Honor Guy' and get the Bandit/Gunslngler Grips. I don't have an image of that one - yet - it's Ebony, of course.
Either is only cosmetic, but will ONLY go on your Cattlemans. They fit no other sidearm.
The Cattleman was the ONLY sidearm in my possession that killed all 4 bad guys on the porch in 'Short Walk in a Pretty Town' - for the Gold Medal. I know 'cause I replayed it 5 times with every sidearm - from a save I made before it started.
