I mod (life is short - this game is NOT) - so as soon as I have the Stable, I spawn:

I love 'em all (love is a strong word to use for an Arabian), so it's not uncommon to put any one of them in the stable - ride/bond/sell. Red Chestnut Arabian - if I'm ever up that way. Steal Black Arabian - I mean it's standing right there - and worth a lot of money when sold (ASAP).
I like riding a Tennessee Walker. Hungarian is a fine horse. I usually rescue a Murphree horse - breaks my heart not to. I make time. It's worth it to bring it back from the brink, feed, brush and pat it often. Then ride it on Murphree Murder Sprees...(I swear it smiles when I do that...lol).
An Arabian reminds me of that horse I had when I was 6 - it had wheels and my feet made it go. In game it feels like my feet are dragging the ground, but I guess that's good - not far to fall when it throws you off in the presence of a Woodpecker.
It's a bit small for Arthur, but looks great in Online if you make your char female. :D
I reckon you'd need to be no taller than Butters - to comfortably ride Dutch's Arabian:

I tamed that pale beast (for some reason) and that day while I was taming it - 3 Wolves showed up. 2 were trampled to death under it's hooves while it was leaping, the second it was tamed it threw me off in the more traditional manner and I had to kill the last wolf with my Cattleman...
The Turk was standing right there - and never moved a muscle.
I Hate Arabians....lol
I've not been using draft horses or the Arabians just because the size looks a little strange with Arthur. I do use a mustang, though. Despite being short (looks 14-15 hands irl), she looks stocky and muscular. Work horses in that time period tended to be on the shorter side - and Western horses still often are.

I ride him to - Chapter 6's ending.
Here is my thought process:
Hamish is Arthur's ONLY real friend. One of the few that don't want to use him for anything other than his friendship. Buell's owners have all died and it seems fitting that Buell, Arthur and Hamish all go to the big hunting ground in the sky.
Well - it works for me - and it's a way to deal with the whole thing - in my mind anyway.
When Arthur is walking Buell back to Hamish and is talking to Buell - if that doesn't get ya - there's something wrong with ya...
;)
I hate the Epilogues - the game ended in Chapter 6.
