Explore Without Horse
I'm just curious if there is anyone else out there that prefers to go around the world on foot, instead of by horse. Obviously going around on a horse is a big part of the game, but going on foot just seems to bring about a new feeling of majesty and size to the place.

Sure. I did this in GTA V a few times... ran all the way from the south to the north. Haven't done this on RDR2 yet though.

I do this from time to time. It's much more enjoyable to use the horse to get to a general area then wander around it for a while. Finding the caves, crevices, and random chests lying about. It's definitely a much more fulfilling experience.

It can often be better to run around on foot when exploring, because you can move relatively quickly with less risk of scaring animals, whereas you have to move ridiculously slowly with a horse to avoid scaring away animals. You also have better control over your movement when on foot. Obviously, running around on foot isn't great for traveling long distances, but it's often better than being on horseback when exploring an area.

I second this. For hunting, the only advantage of the horse (other than it can carry things) is that you are up higher and can see further, but for flushing out wildlife nothing beats creeping around on foot allowing the head shots that come much easier when you are close to the quarry. When you are consistently making one-shot kills without dead-eye, you know you are doing it right. The movement control on foot is very sensitive, so you truly can go as slow as you want upright or crouched, yet still take aim from from a crouch.
