Honestly because it's the most like the best horse my mum and I had years ago (Irish Halfbred), but mainly because the small horses looks silly. Currently got a mare, and think she's a bit more skittish than the stallion I got in SP, but being able to trample wolves to death when failing to shoot them is pretty nice. The standard handling works nice for me at least. Not to mention the coats on them are actually nice.. There's a nice video on YT comparing the speed stat, doesn't matter /that/ much.
Actually haven't changed from the starting saddle yet, mainly cos I did that mistake in SP. Got the "best" saddle, but man, that bridle was friggin awful. Rather be slow than that. Should be able to select a bridle too..

TL:DW Stats don't make a difference so save your $$$ and buy some clothes, weapons or ♥♥♥♥♥♥.
Best thing you can ever do is keep your horse cared for. Well cared (clean) well fed horse makes control easier. Just brush then every time you stop and stuff em full or carrots.
The [Black] Arabian is pretty decent. Easy to fear, but properly managed you can maintain control. Have to keep your distance or the horse will flea for sure. A very nimble horse too. I have traversed spaces that other horse crash on so there is that going for it too.
The Missouri Fox Trotter has treated me quite well. Easier to fear but again with proper management you can maintain control. I have even stomped snakes to death with this horse.
The Kladruber has a high fear level. Will put up with gunfire and predators well enough but will flea if pushed. I have trampled snakes and wolves to death with this horse.
The Turkoman has a moderate fear level that is easily managed. Will put up with some gunfire and predators well enough but will flea if pushed. I have trampled snakes and wolves to death with this horse.
The Breton is the honeybadge or horses. It just doesn't give a f***. Has a very high fear threshold, don't care about gun fire, can stand like 2 feet from a predator and not care much. Trampled snakes, wolves, alligators to death. Almost a cougar too. Trampled it once and didn't kill it, went for a second pass and the horse finally said NO.
On the other hand the White Arabian is quick to fear, hard to maintain control and quick to flea.
I also have a Norfolk Roadster and Criollo. They are serviceable horses but for combat/dangerous animals there are just better choices.
probably part of why i'm still with my Painted haha
and luckily i don't much care for speed as much as stamina, i don't need to be as fast as possible becasue i like to enjoy the scenery
