Generally speaking, good food makes your cores gold and tonics make the the bars around them gold.
Google Pearson's stew. Under the right conditions it will gold all three of your cores for free. If you collect the herbs oregano, thyme and mint you can craft food that will gold your cores as well (using big game meat). Crafting also produces the best tonics; better than you can buy.
Your horse cores will go yellow when you feed it the Special Horse Meal, you make after you get the recipe from Kieran. It'll take Beets, Hay (stable) and something else (Sage, I think).
Your horse will get Yellow Circle Bars with Horse Tonics - brew for the best, buy until you can brew. Generally you won't need them, unless something unfortunate happens - I always keep a few, just in case.
You get gold cores by eating Seasoned Big Game Meat:
Minty - Health
Oregano - Stamina
Thyme - Dead Eye
Brewing Tonics gets you the 'Special' versions of Health, Stamina (Bitters) and Dead Eye (Snake Oil) that 'Fortify Greatly' (your circle bars) - you'll need recipes. Some you can buy from the fence, others you'll need to find in the world.
