Report a translation problem
Not sure how you managed to make it so all your current saves had the same issue with it being lost on them. Try to always have two manual saves for the chapter you're currently on.
If you enabled it by accident; go to the RDR2 folder in your Documents\Rockstar Games
and go to your Profile; delete the CFG.DAT and CloudSaveData.DAT files.
Nothing wrong with the games save system.
If you grab a Horse from the world without buying it; you must reach Level 1 bonding with it, then to actually save it, it must be taken to a Stable. Otherwise the game will not save it no matter what.
Your primary Horse does not get replaced; as you can Stable many Horses.
You can even Bond with a Horse you find/steal; then have your Primary Horse follow along with you as you ride the new one.
When you grab a new horse via find/steal though, be sure not to trigger any missions until you've saved the horse at a stable first.
If for some reason you lost the White Arabian from Grizzlies West, it will spawn again.
