PC fishing
The mechanics for fishing on PC without a controller needs serious work. As a completionist, I am truly discouraged at this point. The legendary fish are impossible using a keyboard/mouse without using glitches or "schemes" which removes all immersion at this point. Desperately hope they will one day address this but have resolved myself to not being able to complete this portion of game sadly.

I don't have any problem fishing on PC. Just hit R until max reel in and when fish is fighting just keep tapping the reel button so it doesn't pull too far away. Also if you move your rod side to side while fishing you will pull the fish closer to you each time. Try it on the smaller fish to see it in action and it will work on the big fish just as well. If you let the big fish run without tapping they will often run your line out and get away. Also if you can avoid a maximum cast distance it will save you time as well. Hope that helps, I enjoy fishing in this game, hate to hear anyone hating it.
You are right, it is super inconvenient to fishing via MK/B compared to gamepad

I feel like the game didn't explain setting it to max-reel through the R-key well enough. But once you got that, it's easy~ And fun. :D

Have you thought about using a controller? Like everyone else who has one on their PC nowadays?

Kind of a non issue here unless you don't own a controller.. in which case.. you should finally go out and buy one..

Just push mouse up/down to drag in the fish and reel even faster. Up your dpi if you can for it.

No problems at all to catch legendary fish with keyboard and mouse for me. Practice a bit.

So...literally just caught the legendary chain pickerell on PC

Walked down to the river, used special river lure, cast and flicked the line once via LMB. Reeled slowly via space
LMB when the fish hit the lure
Stopped reeling when it fought, push mouse opposite to direction the fighting fish goes
you can also use R tapped a couple times to increase reel speed when it's hooked
Reeled it in
Then I tossed the fish back
Two more casts, got it again on the second one.
There's a very few mouse and keyboard inputs.
No problem with M+K to catch legendary fish, friend. It's you.

My question is how did you stop the fish from spooling you out during fighting?

You can't, there is no way to do that, you should just give up like you originally stated. Fishing and reading are not your things.

fishing on PS gave me thumb cramps. pc cant possibly be worse...
