Most notably there was a large RDO + DLSS update last year which broke Script Hook, this caused several mods to not work for a few hours until a temporary fix was uploaded, and a week after that Script Hook itself received a proper update. Nothing terrible, obviously, but it happened. You may have read about this particular instance already.
As for your question though, OP, while future updates to this game may still have the potential to temporarily break certain mods depending on what they consist of, it hasn't been receiving updates often enough in order to hold off from modding the game altogether. R* doesn't seem particularly concerned with the state of their game, and aren't enthusiastically rolling out updates regardless of if stuff needs fixing. I've been happily playing with mods for months in a row now, as have others. I think you'll be good for the most part in the foreseeable future!
I just hate playing something like ETS2 where I have several big mods and everytime it gets updated you have to wait on all the mods to update or the entire thing breaks and that's a big pain in the butt and I'm constantly having to roll back the game version until that happens, which sometimes takes a lot of time...
That's good to know, and yeah there are a number of mods, but not an overwhelming amount which is good because that can be just way to much to weed through. Just thinks like selling guns and bank robberies are the ones I am looking towards and opening up the entire map so I can play as I want, etc
Of course, ALL of these will need to be removed completely for Online, but there are only about a Dozen Files in total, easily dragged to a folder for safe keeping, then put back in the game directory for Single Player.
