Honor is easy to get back. I killed cows, sheep, bulls, and oxes aplenty - and always end up with max honor in every playthrough.
And it's not misleading. Sheep and bighorn sheep are different creatures. :P
Just do it at Emerald Ranch at night. You will lose a tiny bit of honor, but there will be no law on you, and thus no bounty to pay.
Goats can be found by the farm close to the warped tree, close to Emerald Ranch. Kill those at night as well to avoid law and bounties.
Well, get all the russlin' out of the way early - then make it up later. Every playthrough it seems Emerald Ranch chips in at least a million on livestock 're-appropriations' and if you want that Trapper Gear - you're gonna take down a lot of livestock.
Lasso/Reel 'em in/Dispatch
Head over between 11pm and 4am.
Wear a mask, but it's pretty rare to be discovered then.
Head on up to Guthrie Farm and pick one up wearin' a weddin' band.

After a night of Russlin', head back to camp with 3 complete animals of any kind and any condition (I try to get 3* animals, but it doesn't matter) either on your horse or in the bag. Donate them whole and get an honor bonus.
Head on over to the ledger and donate $20-$24. That rings a big bell.
You'll probably be right back where you started.
Remember, bow with regular arrows for goats and sheep, and improved arrows for bulls, cows, and oxes. That way you won't wake up any farmers when on your rampage.

That knife works wonders.
For domestic sheep pelts, you need to go to the plains area of New Hanover and find groups of sheep. They are being corralled so you will have to scare off or kill the guy who owns the sheep and then you can do what you like with them. That or just go to Valentine and kill them there and piss off the whole town, I don't care.
Each to their own I guess.
