I think those that have had this glitch happen to them first-hand should contact Rockstar Support and have the saved game in a ZIP or 7Z file ready to upload and share with them. And as clear and to the point as possible explain the issue to them. Because if this happens at the same spot in the game and is possible to load up an earlier saved game and repeat the glitch then they (Rockstar) really should attempt some sort of fix.
Someone said they loaded up an earlier save and that seemed corrupted or bugged as well. I want to say to those folks what you should do is exit the game and then go to the folder that houses the save game slot files and delete the SRDR file that ends in 15. Then load up the game and enter story and see if your inventory is back in the older saved game that loads up.
As this could be a problem with how the game handles internal game cache in memory and could be why you see the same issue when game is still running and you go and load up an earlier save. But exiting the game and relaunching it would have cleared in game cache that's within system RAM.
A couple issues present themselves when you try to play such a bugged saved game is that your Talismans and Trinkets will all be gone and those you already got as Arthur or John, you would not be able to get back again. Also you would never be able to get back; Horse Brush, Binoculars, Fishing Pole, Camp Fire. You'd have to rely on other in-game camp fire spots in order to craft any tonics or cook foods. And most camp fires do not have a grill so that would mean no seasoned meats.
Now many might be un-aware that you can simply hold down E key when on-foot and this allows you to Rest. Then from here is a Craft option. This only allows you to craft items that do not require a camp fire. Such as Split Ammo, various types of Arrows, Tomahawk, Volitile Dynamite and Volitile Flame Bottle, Horse Meal, Bait.
You would also have to purchase all pamphlets from Fence and read them again to learn certain craftable items.
You would have to purchase various weapons and ammo again as well.
But one of the main items you can't get back that will make things a challenge for you is the Lasso Rope. You might also lose your main Knife. But since any other knives or throw-ables are also gone. Those items you find in the world such as Hatchet, Viking Axe, and some knives should become available again at their original found spot in the game world.
Overall, it's do-able but it sure makes it a real challenge.
