If you have dead eye activated getting them is pretty easy from the horseback. What are you on about ?
When you find one, usually cause you spook them already, drop from the horse and use deadeye to track the one you want. Crouch and stand again, so you will be moving slowly. When you find it, target the area close their head, call their attention and you have around 1 second of clean shot.
Other things that help:
The scent reducing tonic, but you will probably not be using that often.
Go hunt the Legendary Bulk, to use the horns to make a trinket at Saint Denis fencer.

@BlackCobraFst - If you find them easy to hit from horseback then lucky you. I don't. Just a thought, maybe I will try the next one with KB + Mouse. With a controller it is not easy to het them before your dead eye runs out or you trample the rabbits.
It doesn't matter now anyway. I put a scope on my Varmit rifle and managed to get one perfect skin by tracking one on foot. Two more to go and I can forget about rabbits altogether.
Maybe people should just start to use keyboard and mouse for games like this...
There was a time when people laughed about people using a controller on a PC as it is indeed quite laughable.
