The 4GB of VRAM should be fine. The game has two APIs, Vulkan and DX12. Vulkan uses more VRAM than DX12, so to avoid texture pop-in (which Vulkan is prone to) I'd recommend putting texture quality on High when using Vulkan, but bump it up to Ultra when using DX12. VRAM can otherwise pretty much be forgotten about, assuming you'll be playing at 1080p. The GPU itself is what will determine your framerate along with the rest of your specs. What's your setup?
As for your question regarding the game's difficulty: I personally find it really easy (I use a controller with free aim), but my arms are fine so I find that difficult to determine for you. The game does feature a gameplay mechanic called ''Dead Eye'' which you can use at anytime during missions and free roam etc. What it does is it slows down time drastically whenever you activate it, giving you the time to aim properly. At first it will auto-tag targets, but throughout the story it automatically gets upgraded and you'll need to manually tag targets with a key press. This mechanic paired with aim assist, for example, may be helpful to you? Dead Eye does have a ''meter'' which will run out as you're using it, but you can stock up on tonics and other supplies to refill it on the go. You can use Dead Eye as often as you want that way, if you please.

I was so glad when rdr2 online went on steam for 5 bucks. At least online has some challenges if nothing more than trying to guess what the other players will do to you if they get close enough lol.

since you have trouble running those older games, i highly doubt it your system can even run this game.
