Exploration is the major aspect of getting immersed as you go up to the mountains and glancing that view from top to the ranch and streams, finding for rare herbs and animals, investigating each and every house as you pass by because you know something is there which keeps you both thrilled and excited. Treasure hunting, and collectibles were major hands on providing those immersion too. But some of those were bit too much tho like finding rock carvings you have no idea where to look for.
Well like you said the game delivers the most if not all from every aspect like npc or animal behaviors. Yes, it is indeed the most immersive game so far.
Slow pace action or not. Bottomline is no other studio compares to Rockstar when it comes to in game physics and AI behavior. Period. end of story. do not pass go.

the story is compelling , it does have a few issues where for things to happen/ advance the story people in the game have to do the most insanely stupid things ,
but, all that said
this is one of the best games i have ever played , it's far from perfect , but it is excellent, as the was winding down i was fully invested in the characters, just excellent , a well made game
Now in terms of RDR2 I think it may actually beat out TW3 in immersion with its graphical fidelity and that authentic feel for the time era.
No HUD, no crosshair, first person only, no radar, in-game handheld map.
Agreed and personally I would get rid of the hud, map, no radar thing, and make it more in the fashion of Outward, but I think the mainstream audience could not handle that. And get rid of fast travel unless you take a train and if you want to bring your horse, the train must be able to store horses. Again, I don't think this would be widely appreciated.
That said...
Yes. I honestly think this is the most immersive single-player, open world, free roam game I have ever played. I think the NPC AI interaction is the top of the top. I am talking strictly in the context of a single-player open world game.
