In Story you cannot change the gender of the horse.
In Online you can.

would recommend me to buy the arabian or stay at my Black Chestnut Thoroughbred?

I rode the black chestnut for a long time myself. It's a great horse, but I prefer the handling of the Arabian.
White Arabian is probably your next step. Black if you want to spend the gold, but it's only slightly better than the white. If you're newer to the game you may want to save your gold to unlock professions first.
If I'm not riding the Black Arabian I'm on the Norfolk Roadster from the Moonshiner career track which is also a fantastic horse.
The level 60 Turkoman is a great choice as well, but I didn't like it after training it up to level 4.
Lots of folks swear by their level 58 Missouri Fox Trotters.
My recommendation:
Get the White Arabian or Norfolk Roadster next unless you want to spend gold on the Black Arabian.
