Donate whatever you wish, but be careful about giving away items needed for crafting some where else.
Ditto with Pearson's donation box. It allows you to give away things that have a better use elsewhere.

Seems strange to have a gameplay element with no consequences? I thought some of them would start dying or something if they werent supplied with food etc.
Donate cash, use it to buy the supplies for the camp. You can donate any hunting items such as meat, hides, etc.
There are consequences.
The two most important for Arthur are unlocking fast travel from the camp, and increasing the capacity of your satchel. Both are a huge benefit to Arthur.
Less important are the ones which increase camp morale. The ones which increase the quality of food, medicine, and ammunition. People are nicer to each other as a result, and they contribute more to the camp. And sometimes it is simply convenient to restock your supplies from the modestly cheaper camp stocks than it is to just go out and buy them.
Other things dribble down in importance from there.
