Takes time to learn the game, get experience, and then you'll take em down, sometimes. All I can advise is keep your distance and use a killer rifle with sights.
Listen to your horse. I know it sounds bizarre but you horse is always talking to you(feed me, etc). I hear my horse react, see a wave of red coming.
Choose a horse that can outrun predators and is only inclined to throw you rarely. Outrun the predator, then double back and dispatch it. Once you know it's general location it will be waiting for you. Choosing the right horse and repeatedly pressing G seems to keep you in saddle.
Yup that is where I was . I actually got a perfect pelt after 3x dying to the damn thing lol. It is crazy how quick it will jump on you. I used my bolt action sniper rifle. Did the trick. It did not help I had bounty hunters on my ass too .
yeah the panthers and cougars are the same thing in this game. They just call them panthers as well. So yeah , I feel ya lol. They are a pain in the ass. Bears and wolves are nothing compared to these man hunters. If you don't pay attention to the map ..it will hop on you in no time.
Yup I have a great horse. It is that White stallion you can find in the mountains up north. Female , very very fast but not as big. Also very temperamental . However, it is a nice looking horse lol !
It did sound in your OP that the horse is the main problem. There's a certain nerdy element to this game which I like. So native breeds like Nokota and Mustang seem more adept in wilderness, are fast and don't panic. Obviously they would be used to these predators as native tribes used them. Imported horses from Europe freak out.
I'll never get rid of my reverse dapple Nokota. It can stand 30 M from wolves or a cougar without being bothered. A good test is to see how close you can get your horse to stand in front of an alligator. Good horse will get within 4 M.
I'm actually collecting all three Arabians, got two, black and white and off to look for red later. I keep them in the stable like a horse bank.
The actual Honour meter seems a bit ridiculous. If I free some slaves or throw a fish back I get one good point. If I rob a dead man I get one bad point. Pelts are so worthless, I only kill a predator if it keeps after me. Deer and fish I kill for food.
They are a pain in the a if they manage to one strike you while you were hunting for pelts as you may lose all of them. Most worthless autosave feature ever.
