I'm talking about overall rating. If you want an all-purpose horse, try an Andalusian (i love Perlino). They spite to crocodiles and stand their ground in firefights.
Or the Gold Turkoman (Chapter 4, Saint Dennis). Well, any Turkoman...but the best are in Tumbleweed and Blackwater (Epilogue 1 both).
You can only bought Rose gray and Black arabs. White, warped brindle and chest nut arabs are wild and you gotta tame them.
Perlino is a wild horse, found next to Brandywine Drop in Roanoke Valley. Easy to tame and totally worth.
Turkomans i mentioned must be bought too.
This horse has the best Stats for Arthur.
However, Horse stats don't really matter very much for Story Mode - in almost all mission quest scenarios with Horse Riding, your horse Speed is controlled (meaning reduced) in a very frustrating way.
And there is no such thing as horse "bravery" - it's a myth.
I prefer the Missouri Fox Trotter just because of High Stamina and Size (the Arabians look too small for me)
High Stamina matters most, imo - and the actual differences in speed from stats are very small - and no one is going to catch you anyway - as long as you stay on course, and make the right turns.

There's a few junk videos how to do this - i simply figured out how to steal it, but this video shows where, what and such.
I simply watch the crime from near the horse - with my mask on - wait for the locals to flee - and then steal the horse and move immediately down a side street. That's all it takes - and no bounty.
