they are smart animal, not a motorcycle, they should have their own judgment to
avoid to bump into almost every obstacles.
In the game, they refuse to jump down a 1 meter high cliff,
but would hit a rock wall with their head without hestate no matter you
did that on purposely or unintentionally.
Some times they know to jump over a ranch fence no need your command,
some times they don't, then both of you and your horse fall over hilariously.
they don't even know to dodge away from a small bucket or wood box by
their own.
I usually yeet my horse off a cliff when it pisses me off like that. Of course, I'm still on the stupid thing when it dies, so I die too, but it's well worth it.
As for the steering, it reminds me of riding horses irl. They can have a mind of their own and not want to behave and listen, and you'll be pulling on the reins to go one way but they'd rather go the other. Same with jumping, you want to jump over something but the horse isn't going to and balks. They are very large creatures with minds of their own while we are trying to steer them with bridles and saddles. I believe R* was going for realistic when it comes to horse behavior, even with obedience levels, lol.
Problem is that a horse doesn't have third-person camera view of the forest terrain like you do.
Fwiw, IRL, riding in a forest, dodging trees, is not what your average horse-n-rider will do.

For probably precisely the same reason, too. Fortunately, my horse and I had a 4-star relationship so he was willing to forgive. But, he got showered in fruit and veg' for a while after that.
I've found spacebar brings my horse to a stop. Though, I've never tried at speed.
You're right, "S" just confuses and turns him around.

I do this too and my horse kicks me to the ground and knocks my hat off. :(
