Tall Trees and the Great plains is probably the best place to farm tho.
On the hill in the center you can look pretty far in all directions:
Deer, elk, sheep and bears on the edge of the Tall Trees woods.
Bisons, deer and cougars in the Great Plains.
Bayou Wa:
Alligators everywhere. Especially useful for the dangerous predator challenge.
The best option are legendary animals though:
When you've sampled one for Harriet and delivered one pelt to Gus, you can switch to delivering the carcasses/pelts to Cripps.
Legendaries don't degrade (always 3-star) and are always worth more than even the best regular animal.
You can trigger legendary missions from Harriet.
EDIT: Get the best rifle and scope combo you can afford. Sniping 3 star deers from a distance is easier than chasing them down with a lasso to preserve their quality.
You can see far, few trees in the way and lots of bucks and bison (+ Emerald Ranch for farm animals).
After you craft yourself your coats (if interested), just kill all legendary animals and donate to cripps. You get over 30 mats for a single corpse. That removes grinding.

If you are looking for a moderate to fast turn-around for monies then definitely setting up a Grizzles camp near/close to Cattails Pond is the place to be.
Easy to access with a hunter's wagon, and a(n) empty/full hunter's wagon is quite easily navigable, to-from-&-back to camp by all trail-cuts/roadways (INCLUDING "The 'High-Line Train' Railway") and deliveries become VERY "easy-peasy" once you learn the lay of the land (MINUS opposing rivals/raiders)...

(DELEVERIES: "WASTE" 15-30 seconds looking @ your FULL MAP!!! PLOT YOUR COURSE with way-markers, AND FOLLOW ANOTHER PATH, OTHER THAN THE "YELLOW" PATH (AI "suggestion")... & RIDE2DIE2BETTER PROFITS!!!)
(Note: You WILL have NPC's that will trot through on their horse along Cattails Pond (DAMMED SPEAKEASY DRUNKS!!! ...and yeah... IT'S AWL YOUR FAULT..."Shiner"!!!) that can and will spook wildlife and IF you send a bullet near them. They may, and WILL at times, become hostile and shoot back (especially in pairs and plausibility depending on your what your "threat level" of being a [hostile] "outlaw" is ranked at); but there are plenty nooks and crannies to hide bodies that coyote packs will scavenge on them over time.)
DO NOT "TAINT" THE CATTAILS POND WITH SUNKEN BODIES/GAME CARCASSES IF YOU LIKE CATCHING MON$TER FISH(Your wagon can carry them fishies to a butcher to sell)

BONUSES: Setting up your Moonshine Still/Speakeasy in the cabin located just above the "High-Line Train" trestle overlooking Valentine "Valley" keeps all your duckets in a row....
...ALSO there are VERY few predators that spawn (mostly wolf packs ...and occasionally.... a very, VERY, VERY ANGRY rogue and rabid Grizzly Bear */located\spawns* "below the cabin and above the train tracks" (NOTE: ELEPHANT GUN!!!) that will come close to Cattails Pond, but you CAN hear them 'call" (wolf howls and bear growls) in the distance and are able to track the IF you desire to hunt them down at your mortal risk of life and limb.
There is also a "legendary" bighorn/mountain goat (according to scribbles on the map) that roams through the area but I yet haven't bagged and tagged it; let alone able to spot or track it, no matter how much ("prime") bait and/or pheromone vials I've used.
If you want to take a chance and have Harriet spray you with her skunked "spritzer" for KILLING (near her camp???), get bugged out resulting** in "lost" **[BUGGED?]** skinned pelts, and she then sends you into a tailspin with a "pist" of her "special" mist** next time you visit her.
**Which begs me to question...**
...are the pelts players are "skinning" that disappear before being thrown on a horseback/wagon-hold REALLY a "bug" or is it Harriet that is being an *sshole ...and STEALING THEM?**
Be perfectly honest, the FARTHER AWAY from Harriet the LESSER of the "chance" I have witnessed a "pelt 'disappearing' bug".

If you don't want to do this just get Naturalist Role up to level 5 and skin the legendary animals Harriet sends you to sample. Turn the skin and extra part in to Cripps for a 50& fill on the bar per Legendary (Bison is worth more than 50% if you get the option for it).
