For example, I bought a Kladruber early in game and was so impressed with how it handled I bought the expensive variant with more heath and speed. My second one is not nearly as brave as the first one and stays in the stable unless I know I need to be going places in a hurry.
Dosn't like snakes much but can be managed in most situations.
Not sure about the other high level horses but I'm not intending to buy another.
Most have ugly paint work, so I'm sticking with Snow White
I have an Arabic horse and yes it's they are skittish if u calm them while on u get a lil boost while on sattle as they run away.
Best horse is debatable, and possibly varies due to possible hidden stats like bravery and clumsiness. I own most of the expensive horses though and in my experience the level 20 role horses are probably the best, Missouri Fox Trotter and some of the 18 gold ones are pretty good too. My role horses seem to have just 1 minor flaw each, slightly afraid of either predator or gunfire(not enough that patting doesn't cure it), or clumsy. I do have the ♥♥♥♥♥ Cob, and it's very good. Not really afraid of anything, but it's clumsy, which is probably the best way a horse can be besides flawless, as long as you watch where you're going.
The worst horses I have by far are actually the most expensive, the Black Arabian and Silver Turkoman. Both are extremely skittish, the Arabian towards everything and my Turk darts half-way across the map if anyone fires a shot within 2 miles. If you look at these horses in the stable you can actually see how they are moving around all restless and antsy looking.

As for horse, my fav is Turkoman. It's fast and not that easily scared by predators.
Horses, depends - Health-wise, go the Turkoman, stands up to pretty good punishment in mounted gunfights, speed-wise the Foxtrotter supposedly fastest in game, and the Arabian is a nimble little guy, good for sharp turns.
As far as 'bravery' is concerned, I dunno, I think it's a non-stat; my Foxtrotter has literally trampled on wolfpacks without throwing me, and my Arabian has bolted at snakes but mostly stood ground against charging cougars. Maybe it's related to how well you're bonded with your horse, because all my Level 4s are less skittish than they were at lower levels.
Pick one you like, bond with him/her, and figure out what you like best, I s'pose.
