What should I do get better leather from hunted animals?

Observe them to see if they are 1,2 or 3 star.

Go for the 3 star animal.

Then pick the right weapon and shoot them between the eyes.

Also, if you're going after deer, there's a trick I use called the 'Lasso and Kill' technique. Chase after the deer on the horse and lasso it, and when you get close to the deer, it gives you the option to kill it. Not sure what other animals can be lassoed, but you can kill deer that way without risking any loss in quality.

Works on herbivores, DO NOT TRY THIS ON A COUGAR...unless for lol's
