I haven't done model swapping in RDR2 myself but just like other R* games there's more than one way of streamlining the process. Searching for either a trainer (cheat menu) or a save editor would probably be the easiest ways. I'm sure there are multiple to pick from but I can't really offer an opinion on which is best. Better to seek out a popular consensus on that.
