Same thing randomly happens with medium animals like pronghorn/deer as well.
Fairly certain it is a server side problem as the issue comes and goes as I go into missions/gameplay modes and exit back to free roam. I've opened a case with Rockstar but the only suggestion so far was to re-verify the game files which made zero difference.
I've had some limited luck with dropping the pelts immediately after skinning them, but it's hard to tell if it's just random or not.
Park your horse on the carcass to force the quick skin bug and as soon as "press R to stow" appears do that immediately. Sometimes it looks like it is going to glitch and vanish but it glitches onto your horse instead.
I have seen hacks mentioned in a few posts too which is plausible. That would fit the behaviour of it coming and going as you move between game servers and have different players sharing your session.
However what I have also noticed is that when it's really really bad and almost every pelt is vanishing is that 30-60 sec later as you're riding around you'll see an inventory add notification of the pelt that just vanished.
An educated guess here is that the server is probably just getting hammered with too many transactions in the world and can't keep up (probably doesn't have enough compute to handle the number of players connected). So the pelts vanish on the client side as it's out of sync compared with what the server has registered on its side.
The only fix that I have found that is VERY consistent, is to download a VPN, I am using ProtonVPN than just connect to literally anywhere and the problem seems to disappear. I think it is something to do with our modems.
And yeah, for about two weeks now, any large animal skin just disappears most of the time. A few people are saying they get it to work, but I have not seen any situation where it works currently.
For me, the skins it is effecting are the skins of animals that can not be picked up. If there is no pick up option then when I skin it, it gets the parts, picks up the skin, and then poof the skin disappears. A few moments later on the right side of the screen the faded warning for dropping or losing an item will show up for the skin.
I have tried several things including Rockstars initial troubleshooting and the first support option they offered. (refresh profile). Now they are asking me for video and I am working out the hassle of running any form of capture just to show rockstar that they are morons.
JHarlequin - if you're running an Nvidia card just use the Alt + Z in game overlay and record before you skin, then stop it afterwards. They show up under: C:\Users\<username>\Videos\Red Dead Redemption 2\ then you can just grab them, upload to Youtube and publish as an unlisted video.
Their next suggestion was to sell all animal parts out of my inventory... which I'm already doing already anyway... to make money/create trading goods... ya know... kinda the entire point of skinning things in RDO...
I seem to have pretty good success with skinning medium animals by doing the stop horse ontop of carcass quick skin + immediate stow method. Most of the time the stow animation is cut short and it just pops onto the horse but I at least get to kept the pelt.
I don't seem to have the same luck with the large animals and lose almost all of those.
The latest is to try changing my outfit, which again made absolutely no difference. Even tried stripping everything off possible down to default starter pants and default belt/holster.
I've supplied them with more video evidence so we'll see what else they come back with.

You'll notice that even the stow animation looks rushed/broken when it works successfully like this. You can also block the ability to skin if you're completely on top of it.
