Some people are tougher than others that's why some people go down in 2 punches.
The best way to get a feel for it is lots of practice.
Hit E for grabbing your opponent, then spam F until they go to their knees.
Another thing that is usually very successful is a tackle.
If you hit F while running into somebody you will tackle them to the ground and then execute them.
However, if you hit your fire button when running into somebody, you will tackle them with your shoulder, pushing them to the floor. Then you have a free shot, or can knife them.
That shoulder tackle is the best thing for PvP series, since you are not getting stuck in struggle while somebody else shoots at you.
You can also toss people from cliffs or bridges by grabbing with E, then holding a directional button and pressing R to cancel the grab.
This will toss your opponent into the direction of the directional button you held down.
Also, any stamina tonics or ability cards like peak condition lets you do more damage in melee combat.
Mashing the punch button will drain your stamina and you'll bite the dust quickly if you do only that.
Moving backwards with a direction key double tap or while blocking counts as dodging, I think.
I'm not absolutely sure, I dodge by accident, mostly.
