I do plenty of bad things. I know exactly what i have to do to keep my good honor maxed. You just have to know what interactions in the game allow you to counter the bad you do. For instance the best for me is to feed my horse while i am riding. Horse care gets you good honor back. Turning in bounties alive, positive Free-Roam missions, Even hunting and shooting small birds will get you positive honor for being resourceful.
how to do it

To raise your honor in Story Mode, do the following:
Go fishing, catch and release
Go to Saint Denis and say "Hi" to everyone you meet
Donate money to the blind old man whenever you find him.
Donate some money at the gang's camp. $10-$20 will do at a time
Help out strangers whenever you can
Do your chores in camp: chop wood, move hay bales to the horses, fetch some water, move grain sacks to the chuck wagon.
If you get into a scrape and get dinged with negative honor, rinse and repeat.
2. no you dont, you must be mistaken a stranger corpse. Bandits corpse doesnt get you negative honor
3. if you get punked by someone in town, ALWAYS use your fist, DO NOT use any lethal weapon, otherwise you'll get wanted for murder.
