Dunno about online, but in story is it story related. Guns, clothes, equipment... they all need you to play more to uncover them all. I am in 3rd chapter and still have some guns and stuff locked.

Apparently Rockstar gave us just half of the needed tutorials, many things you need to uncover through google.

All of the weapons aside from one (cant remember which, but you get it off an enemy on a mission) will be given to you through the course of the story, some for free. Pretty much all of chapter 1 story missions will introduce a mechanic IE: hunting, fishing, robbery, bounties, etc etc. All of the tutorials can be found in the help section of the menu to go over if you forget something.

Couple things I think are specifically important to know:

If you're gonna shoot first, put your mask on and leave it on until you finish looting bodies.

Most witnesses to a crime have to be killed but if you were wearing your mask while you commit the crime you can talk your way out of trouble if you run into cops.

Be very careful with your horse. It's best to not even go near anyone while you're on it. I've had situations where I accidentally knocked someone over with my horse and ended up killing like 40 people beofre I got away.

Pressing S (or whatever key is backwards for you) is not the way to stop. You have to use the separate stop key to stop quickly on your horse.

Don't bother with bying special ammo unless you have money to burn.

When you shoot the cattleman revolvers, any lever, pump action or bolt action you press to shoot and press again to ♥♥♥♥ the hammer, rack the pump/lever or manipulate the bolt.

You can interrupt your reloading animations if you need to. IE: Run out of ammo, load a couple rounds, fire those, so on so forth.

Geez NO! I want to see a deer in sunrise upon deathscene, not coyote in the rain. No need to shoot the witness, you can lasso them up, then cut them loose and they don't want to report you anymore.

I've had that not work on several occasions.

This work 100% for me. Every time. Outside mission off course. If mission, everyone's behavior is scripted and you need to act according of what mission prompt asks you to.
