Yes, it goes well with the atmosphere and the rest of the design
There are some gamey elements involved, genius, but overall this is a really slow and heavy game. It's not like battle royale where you go into a house, loot everything by spamming E and hurry out because there's someone around the corner you have to shoot or its game over.
I like sluggishly riding the horse around the forest, tracking and hunting a deer after missing my first shot and injuring it, then finding a house and try to figure out wtf happened to the inhabitants simply by visual storytelling. It's a process that simply goes well. Every developer can make some doors open and some items disappear when you mash a button, but few can make animations for everything and also have them look good and feel good. Each to their own I suppose.
I totally get that - but fast looting (as an option?) wouldnt be a bad thing....

If that doesn't show just search up "Speed Up Game - 1 Click Holding Prompts - Faster Animations"
That mod breaks the game in several known places - and probably dozens of unknown places<---the price you pay for "RDR2 Turbo" (for children with a really short attention span).

Would you still be immersed if I pointed out that, given a day is 48 minutes long and it takes about 2 seconds to pick up a can of beans, you're taking the equivalent of literally an entire minute to pick up said can of beans? What if I pointed out that it takes around 20 minutes to cross the entire geographical area of the game (equivalent of less than half a day) but somehow neither the feds nor the Pinkertons nor local marshals nor bounty hunters managed to just happen upon Dutch's camp, even though the cops can find you in seconds if you fire a gun atop a train? Are you immersed if a black dude goes and reports you to the police after you murder klansmen in the wilderness? What about when eating yarrow removes snake toxin from your body but does not remove mycobacterium toxin? What about when Dutch has tens of thousands, or even hundreds of thousands of dollars in the coffers but still needs ONE MORE SCORE?
The scenery does look pretty good, though.
Ah yes, truly the narrative complexity of being unable to run with your fishing rod assembled is the kissing cousin of Andrei admiring the sky as he lay wounded on the battlefield
