This is what I know from playing single player, hope it's helpful?
The first thing is observation. Use your binoculars or a scope to study animals, then read up in the Compendium about which weapons work best for each one.
I find that bows and small game arrows work best for the smallest creatures, Varmint rifle for medium-sized ones, and my Bolt Action Rifle for the rest. The ammo you use matters too, so split-point, explosive, etc. won't help you get good pelts.
The trick is identifying a 3-star animal that you want to skin. Locate it, take it down with a head-shot, collect the perfect pelt. Although there should be other ways to get a perfect kill (like the heart for example), I rely upon head-shots since they are reliable.
As for your satchel, that can be expanded through Preston and camp upgrades, etc. You start out with a small satchel that has very little room. You end up with a magical bag of holding. To make space you could dump things you don't want/need, or you could sell off stuff you don't want, and then there's always using that stuff yourself.
in general: if the pelt/animal fits in your pouch use a varmint rifle. if the animal can fit on the back of your horse use a bow/rifle (not a repeater). anything too big to carry use exclusively a high damage bolt rifle.
Some of the things don't make sense really.
Like people said, first step is figuring out the weapon and ammo. Second is finding the high quality animal. Third step is making sure to make an effective shot.
A single fatal shot with the correct weapon and ammo in the correct spot will get an undamaged pelt from the creature. If the creature is of the highest quality then you will get a perfect pelt.
It's the ultimate manpurse, because it can store 99 of each item.
No more storage trouble ever again.
A curiosity - though I haven't tested this enough to be sure it always holds, I'm finding that human NPC's are often killed with a single arrow.
