can you kill them without losing honor or upset the folks?

I've killed and plucked several chickens and roosters for the daily challenges.
I first knocked out one farmer, and the other one further away didn't see me.

When the farmer woke up again, he just cursed and ran away, completely ignoring all he dead chicken in the pen.

Killing farm animals always grants dishonor, however, the honor grade doesn't matter in online as of yet, except for certain story missions requiring either high honor or low honor.

Also, brushing your horse compensates the dishonor of a couple murders.

In Online I never had to brush my horse, the option is just greyed out and the horse stays clean, dunno if that is a bug.

In Singleplayer, yes.

It is even funnier: Every 3 strangers you greet you gain honor.

So you can "attone for your sins" by just being ♥♥♥♥♥♥♥ friendly :D

Don't think you can avoid the honor loss in every case but shooting cows for perfect skins and then boosting your honor back up with horse care seems to be the way to go.

Have you purchased the brush from a stable?

The horse health icon will regularly start flashing a red brush icon, if your horse needs brushing.
About once every in-game day maybe.

I let a pig out of the pen at one of the stations and followed him into the fields and killed him. "Slaughter" came up in red so a bit loss of honour but I am so squeeky clean it wont bother my rating-

Well no, I started about a week ago I thought It just wasn't implemented lol.

Did you buy a brush at the stable? Works fine for me but you cannot do it unless you are stopped.

yeah try to do this without people around, i was getting pork meat for a stew and this woman saw me and start screaming and i got animal cruelty thing so i just use my lasso to tied up the woman and skin the animal and after a while the wanted thing disappear
