Apart from that I agree the bar is a wasted opportunity for fun content on the developers behalf. It would be nice if the NPCs paid to drink. And we could have had customer requests for recipes for them as well as for deliveries.
I do agree with the poker table thing, though, that would have been really cool to have my own in my own bar.
They should add a fight club attachment to it for some bare knuckle fights

-Free coffee machine
-Free almonds
-Band music
-Some of your easiest daily's will be part of the saloon (dance, play music with band, change bar decor, etc) EZ Gold <-----so it eventually pays for itself + profit
Do it while standing next to a chair, and it's the closest to a bar brawl that you can get in this game.
