You can use the campfire in your camp, or any of the ones out in the wild.

In addition to those fixed campfires on the map, randomly appearing gang hideouts, bootlegger camps/roadblocks, bounty target hideouts, etc. can also contain campfires.
If you have the meat, you should always be able to cook the plain recipe.
You can select the other recipes by pressing left or right, and if you have the respective herbs (thyme, mint, oregano) they shouldn't be greyed out either.
And yes, especially the deluxe campfire upgrade has benches an stools in the way in some placed.
Online at least, you can cook _any_ meat as plain meat of whatever variety it is, and you can season any meat with either oregano, mint, or thyme. I thought that it was the same in single player, but it's been a while since I played single player, so I'm not sure. Either way, I'm unaware of there being any meat in the game that you don't hunt for, fish for, or buy from the butcher, and AFAIK, the meat you buy from the butcher is the same as the meat you hunt for or fish for (though I haven't paid much attention to what he sells, since it's so easy to get meat from hunting that it's rather silly to buy it from him; I just sell to butchers and never buy from them).
