I'll warn you though that the game is very much designed with the idea that it will tell you where to go at least some of the time. If you refuse to let it, then the odds are high that you will fail missions due to the timer running out - especially for missions online.
True, Rockstar games are like that...
But as others have mentioned, the GPS is basically required to chase down NPCs and find other mission items, so that would really only work for wandering and exploring.
But it IS Rockstar and they do things their way.
