If you are talking about the mystery vouchers from the outlaw pass, you can find them in your benefits menu, where the other vouchers are. It should let you claim them from that menu.

I know where they're at
Doesn't give me options to redeem them with though

Some vouchers require you to be in a specific place to use them. They should tell you if you mouse over them. For example, in order to use one that gives you a discount on a stable slot, you have to be in the stables.

Beyond that, I'm not certain how to help.
